This wine is a blend of Cabernet Sauvignon (40%), Syrah (40%), Cinsault (15%) and Carignan (5%). The grapes are grown on 1520-year-old vines located on sandy limestone, with clay sub-soils. All four varietals have been hand harvested and fermented in concrete vats for 10 days. Malolactic fermentation is allowed to happen spontaneously. Following this the wine is blended and then aged for 16 months in concrete vats.
The wine is deep ruby red in colour. On the palate the dark cherries, cedar wood, rosemary, and cloves show through. A rich savoury flavour balances well with the fine tannins.
