A white sparkling wine that is both bright and complex, from a producer in East Sussex. This is a bright wine full of flavours like golden apples and buttery brioche. It has had 60 months to age on lees, which brings depth and maturity into the wine. The layers of complexity and autolytic characters dominate the wine. This wine is made using the three champagne varieties, this being 60% Chardonnay, 25% Pinot Noir and 15% Pinot Meunier. This wine is full of freshness and complexity, a great example of English winemaking at its best.
