JACK FRANCIS FAIRY RUST SANKT LAURENT ZWEIGELT

Founded by Derry-born winemaker Jack Francis, this winery is the result of a journey that began in Argentina in 2016 while studying Environmental Science. Inspired by the world of wine, Jack went on to complete a Master’s degree in Viticulture before gaining experience across France, Germany and Australia. He eventually settled in Austria, where he embraced biodynamic viticulture and low-intervention winemaking. Today, he crafts organic wines that combine the purity of Austrian terroir with the character and storytelling spirit of his Irish upbringing.

Fairy Rust is a blend of 90% Sankt Laurent and 10% Zweigelt, made to showcase bright fruit expression and drinkability. The wine undergoes semi-carbonic maceration, enhancing its vibrant aromatics and juicy character, while gentle punch-downs ensure soft extraction and finesse. It is then matured for 12 months in acacia oak, adding subtle complexity and texture without overshadowing the fruit.

Bursting with layers of sour cherry, raspberry and blackberry, the palate is complemented by delicate baking spice notes. Medium-bodied with balanced acidity and supple tannins, it delivers a soft, rounded finish that is both approachable and elegantly structured.

A versatile food wine, Fairy Rust pairs beautifully with roast meats, duck, mushroom dishes and medium-aged cheeses. Its bright fruit profile and gentle spice also make it an excellent companion to charcuterie and hearty vegetarian dishes.
